Just one thing...it's a tiny bit sharp inside where egg yolk gets cut if you're being too rigorous with it. Gotcto just be patient and let drain without moving bk and forth. Love it tho...I do alot of separating eggs and it rests on bowl so you have free hands to crack the egg.

I have only recently learned to make decent hollandaise sauce after years of trying. I caught an online method that uses a blender, and found it to work. When I was a lot younger, there used to be a frozen broccoli with hollandaise sauce that I really loved. I tried to make it many times with the old recipe books, but it always seemed to separate and was too much on the sour side. I found the blender method recently and it works pretty well. I'm a little uncoordinated when it comes to cracking eggs. I often use a knife, but If I hit to hard I split he yoke, and then don't get the proper separation. This device works well, it fits over several size small bowls, and I can crack the egg and use both hands to open it. The white separates quickly in the large holes. I bought one of those plastic ones at the grocery or dollar store, but it didn't work nearly as well. This is quick, and easy to rinse out and be ready for next time.The separator is stainless steel, and brushed finish on the outside and a highly polished chrome like on the inside where the yokes are caught. The yokes come out somewhat cleaner than when I used that plastic thing, so it does the separation better. I can now make both egg white omelets with cheese and spring onions, and hollandaise at the same time for my steamed broccoli. If I'm making my version of egg McMuffins, I can make what they originally intended but was too complex for fast food. That is Eggs Benedict, I'm not sure how it got it's name, but the traitor to me was always the separated hollandaise sauce, which I now make better and faster.The steel device has a small hole in the top side so you can hang on a thin hook or a nail rather than having to fish for it. I've found a lot of recipes that call for either egg yokes or egg whites alone, so this can be very useful because its so efficient. This is something that because of the material and how it's used will be a legacy or heirloom kitchen device. It could last for decades or even centuries. Recommended.
