So weird this is so hard to buy now!
We scoured the grocery stores for a month trying to get ahold of a normal, plain, nothing-fancy box of flaked salt. Koshering salt, flaked salt, finishing salt, whatever you call it, we couldn't find it anywhere. It's *so weird* to think there's some kind of salt shortage. Welcome to the world of economic trade after tariffs, I guess? Anyway, it reached the point where we're not finding it at the grocery store, the restaurant supply store, Costco, not anywhere. W. T. F!At this point I'd have settled for some generic brand. It's salt, who cares. So we go look online and there's like... only one or two listings for a box of koshering salt. Crazy! It was a fair deal and a two-pack which means we'll be able to hold out for a while now until the next nutso thing happens to our economy.The salt is exactly what you expect. It's the same stuff you used to be able to get on that bottom shelf at the grocery store. I don't want fancy woo-woo salt, I don't want to use granular salt as a finishing salt, so this is the stuff. Price is fine.I mean, it's salt.

Great quality and taste - not overly salty and a lovely fine grained size. Has always been consistent for me even in the bulk size. Doesn’t clump or stick together in the paper box even once opened and easy to pour using the built in paper spout. I love that it’s really sustainable since the paper box can be recycled.

The right salt is VERY important!
I am a home cook who occasionally gets the dish perfect, not enough times. but enough to know it wasn't a fluke. I've been cooking for decades now and are ashamed to say I had never heard of Diamond Crystal Salt. This salt will make you look like a chef to family and friends. This is literally a game changer... perhaps life changer. Whatever you are cooking (meat or veg.) Add this salt to your dish and that ingredient's taste amplifies, sometimes brings out a hidden flavor.I learned about this salt (and many other cooking hints) from, a book called Salt, Fat, Acid, Heat by Samin Nosrat. The author details the reason for all four ingredients. I really like Diamond salt the best for all my cooking needs. I have a hard time finding Diamond salt in my grocery stores. Not sure why that is, but after becoming frustrated, I decided to buy it from Amazon. Very happy with the time line and ease of ordering.

The ONLY salt to use for learning recipes
Diamond Crystal Kosher Salt. It is THE BEST for chefs who use recipes. I know lots of folks can just dump stuff together and work by taste - and I can do that too once I know the base of a recipe. But when I'm following a recipe I want to go conservative on the salt.That is where Diamond Crystal comes in. The crystals are uniformly sized and are the least salty salt by measure that I know of. Meaning if I have a recipe that calls for 1/2 teaspoon of salt, I know that if I use Diamond Crystal that I won't be over salting it and I can always add more later. If I use Morton or some other brand, I'm almost always oversalting the dish with the same measurement.It does cost a bit more, but given that food costs are so high I really prefer to spend a little more on salt knowing that there is no way I'll ruin a dish by oversalting it. And really. of all the ingredients, spending a bit more on Kosher salt isn't going to break the bank compared to spending more on other ingredients.The other thing I love about Diamond Crystal is if I am making a recipe for myself - writing something down that I know I will want to recreate later - If I use Diamond Crystal when I make that recipe I know I'll be able to recreate the salt levels over and over again.My local supermarket has been out of Diamond Crystal for almost 5 weeks now and I ended up buying a box of Morton Kosher Salt and regretted it because I ruined a few dishes with oversalting.
