Great when hot and fresh, okay as they cool down
These are delicious, fun shaped not-pasta-pastas. I really enjoyed these in place of spaghetti and will get them again. Great texture when fresh from the pot, no strong flavor and they work well in all the standard pasta dishes I tried.My only complaint? heads up? Is that they get chewy as they start to cool down, so eat when they are hot and fresh, and don't save for leftovers.

Nice pasta and much healthier!
We've been getting into healthier alternatives for pastas, so this was interesting to try. The shapes are very fun, even for adults. We appreciate the simple and minimal ingredients, which make watching for food allergies very easy.Overall, the pastas, once cooked, had a nice texture. But like any pasta, you don't want to overcook it either. We made the mistake of overcooking the chickpea pasta. The water left behind was very starchy and thick, and the pasta shapes broke apart when we strained it and tried to mix our sauce into it. Also, this was our least favorite flavor. It had a very distinct chickpea taste, and if you like/love chickpea, then this would work out perfect. One of our daughters loves chickpeas/hummus and that was the first thing she tasted when we asked her what she thought of it.When I tasted it, it honestly had a bitter taste or bite to it. Not sure if this was due to it being overcooked. The other pastas, the lentil ones, were amazing. We all enjoyed those ones and learned from the chickpea one, not to overcook it. These pair the best with a red sauce in our opinion. Perhaps we will give this another go and try different sauces and additions to it.

Tastes like regular wheat pasta. DO NOT OVERCOOK!
This is a very good pasta. I did learn not to overcook it. I followed the instructions to cook. I did add some salt to the water for flavor. At the end of 7 minutes of cooking time, it was perfectly al dente. They tasted identical to al dente flour noodles. I then made the mistake of shutting the pot off and running downstairs for something. The errand took me only 2-3 minutes but within that time, the hot water cooked the pasta a bit more. The noodle was still firm and held its shape but the texture was a bit different. The extra cooking time did not improve. The box says Do not overcook. They mean it!This is one of the foods my husband tried with me. He liked it very much and said it tasted very much like regular pasta. Just different colored.The shapes are a lot of fun. The chickpea noodles are alphabet shape. I remember when my kids were young they loved playing with their food when it came to letter shaped noodles!Being lactose intolerant, I can very much appreciate the no major allergens. There is none of the following according to the package: No peanuts, No dairy, No sesame, No fish or shellfish, No tree nuts, No egg, No soy, No wheat or gluten. It is just one ingredient. I honestly didn't realize that chickpeas or lentils could make such a good pasta equivalent to a regular flour pasta.Pricewise: I think it is all how I look at it. A box of regular flour pasta you can pick up under $2. When I look at it this way, I find the price of this a bit high. If I look at it as 4 servings at around $5 that is made free of some major allergens. One ingredient. I can rest assure that for me, there is no chance of milk in it, I think it is very much worth it. Add some sauce and a protein it makes a very tasty meal for a family or for one with left overs.

Cute shapes for our favorite gluten-free, high-protein pasta
We’ve tried a million gluten-free pastas and noodles. We eat a lot of ethnic rice noodles of various types and more traditional rice pasta, such as Tinkyada. However, while those pastas are good, they are 100% rice, which is rather like adding sugar to your diet. When we are sticking to our healthy diet, we use and love Tolerant pastas. There’s no digestive upset, no off-taste, just good old pasta to add to any dish.The green lentil and chickpea Tolerant pastas are very good, but the red lentil Tolerant pasta is awesome and our favorite. All of them have a good texture and a great flavor. You can use these in just about any pasta dish – and we’ve tried many – and they will go well and absorb the flavor of your sauce. Cook these al détente and you’ll be a very happy gluten-free camper. One Ingredient! That's right...ONE!
This is not my first experience with the Tolerant brand. I found them because we were looking for an Organic, gluten free pasta option and we found their lentil based pasta line. However, this IS my first experience with their Chickpea pasta!The variety we received was "AlphaLand", where the pasta was in the shape of letters of the alphabet. As with the lentil pastas, the recommended cooking instructions call for you to boil 6 QUARTS of water! My largest pot would only fit 3 quarts and the smaller amount of water still worked fine. The reason they want you to use so much water is because of the heavy starch concentration in the legumes. The water will get cloudy and foamy while you are cooking. In order to keep the pasta from sticking afterward, you need to rinse it with fresh water.The flavor and texture of the pasta is incredible for only having one ingredient. You can tell that it isn't made with flour, but is an amazing alternative for those who are gluten sensitive. You can also add cheese or a sauce to these to give it a twist.If you've never tried pasta made with legumes, Tolerant is a great brand to try. I highly recommend them!
