So Smooth!
I drink mostly espresso, but the coffee journey has opened my eyes to all the good coffees around the world. This is the first coffee from Mexico that I've had, though. Since it's ground for drip or pour-over, I've been making it in our drip coffee maker. This is the smoothest coffee I've had so far, it's fairly mild but very flavorful at the same time. Texture is good, color is good, flavor is rich and low in acid. This is a coffee I could drink all day, it's an easy drinking coffee. It's a little fine for French press, but it would probably work well enough to get by. Delicious and smooth, very high quality. This is a big bag of coffee, not your grocery store 12 oz. bag, but it works out to the same price per pound I've been paying for coffee from a local roaster, and much less than some of the specialty coffees on the market. The one-way valve on the bag allows the CO2 from the roasted coffee to be released while keeping oxygen out, so it stays fresh until opened. I have a good coffee grinder and would have preferred to grind from whole bean, but I'm not the typical customer. Given the size of the bag I'd split it into smaller amounts in air tight containers (like jars) and store it in the freezer until it was needed. Coffee that you're using should stay at room temperature, but for longer storage put it in the freezer. Once coffee is ground and exposed to air it loses some of that good aroma and flavor quickly, so work with small batches.

Bag not vacuum sealed
This bag of coffee is ground, not beans. I was surprised to see that while the bag came sealed, it was not vacuum sealed. Since ground coffee degrades quickly, this is concerning. The coffee was good and I will store it sealed in a Ziploc in the refrigerator now. The price of $34.00 seems a bit high.
