The Castelvetrano Olive, or Nocellara del Belice, is an olive grown in western Sicily with an intense green coloring and sweeter flavor. From the Island of Sicily (Southern Italy), this olives are large and bright green with loads of meat on the pit. They are mild in flavor with a slight saline and sweet after taste. They bear the regional qualities of delicate fruitiness and almond tones. As with all olives, are delicious served with all table cheeses and salami and they go especially well with buffalo mozzarella. They can be dressed with a little bit of olive oil, orange peel and some thyme to enhance their flavour. Castelvetrano olives are Italy's most ubiquitous snack olive.
