I purchased one for my son in law, and one for myself for Christmas, we couldn't be more pleased. I already use several F Dick cooking and butcher knives, so I was confident in the brand. This knife will shave roast beef like no other. I have another friend who enjoys cooking and entertaining, and am considering this knife as a gift for him as well.

Very Good Blade and Handle for Cleaning Fish in the Field
It arrived four early from CutleryMania and just in time to clean a salmon.It's a great breaking knife, better for my purposes than the eight-inch Victorinox 47537 breaking knife it is replacing. I found the Victorinox blade to be more flexible than it should be for filleting a salmon, and the Victorinox Fibrox handle that I usually favor would get dangerously slippery in the field.The F Dick Ergogrip gives me a better grip at the cleaning station, and the stiffness of the blade is just about perfect. Both the Vistorinox and the F Dick make short work of cleaning large salmon, but the F Dick is just better - more stiff and more safe to use - in my mind.It did not arrive hair-popping sharp, and it took thirty minutes with the whetstones to bring it to as sharp as I wanted it. As I recall, it took less time to sharpen the Victorinox, suggesting the F Dick steel is slightly harder and should hold an edge longer.The knife I received was not hollow ground. When I marked the blade to determine the correct sharpening angle, it turned-out to be a straight bevel. I didn't care about the factory grind, but if you are hunting specifically for a hollow-grind blade, mine was not. Yours may vary.I, personally, cannot see any advantage to the fluted - or scalloped - when cleaning a fish, and since I'll never use this knife in the kitchen, you may have very different thoughts. They didn't seem to help me, but they definitely did not make it more difficult.This is a better blade for cleaning larger fish than the Victorinox was, and the Ergogrip means I won't be worrying about only being able to count to nine.This has nothing to do with the knife, but bears stating that the knife was shipped wrapped only in bubble-wrap. I would have liked at least a plastic blade sleeve to protect the edge (and me) but it arrived in perfect condition.I recommend these knives, and will be giving them as gifts.

A cutters dream
I have been using this knife everyday for 6 weeks and still haven't had to take a stone to it. Just steeling it is perfect. The hollowed bevel allows the meat to slice cleanly without sticking to the blade. The grip is comfortable with minimal slipping. Highly recommended for meat cutters. 5 stars all the way!

Not the knife shown in reviews
I’m a meat manager at a wholesale club and love breaking knives. Disappointed to read this knife had the divots along the blade to make cutting through meat easier. Just opened up my package to find out I was misinformed. Also found the same bad info on their 10” breaking knife which lead me to this knife. Very disappointed

this knife is one of the best knives i've ever bought. just amazing quality, price and performance. I can shave my face with this knife. It cuts through tough watermelon skin like butter.

Ergogrip Breaking knife
The knife appears to be well made. It arrived with a very sharp edge, which has held up well to use. It is stiff enough to handle heavy carving and yet still handles thin slicing very well. It's my preferred knife for mcarving meat.

Excellent knife - well constructed
Ive used this knife daily for almost a year and it's still my "go to" knife. The ergonomic handle feels good in the hand. I have a large hand I dont feel like it's too small as some of the Victrinox knives in the shop tend to feel. Stays fairly sharp with proper TLC.
