I'm new to the whole "grind your own flour" thing, since receiving a grain mill for Christmas. What a wonderful journey this is taking me on. I've been making my own breads for over a month now using this grain and it's a game changer. I feel better and am having a blast exploring all the ways I can use it. The main thing is cleanliness of the grain. One little pebble and your grain mill can be ruined. That's one of the main reasons I chose this brand, because of the good reviews and recommendation of others. And I can concur, it's good clean grain. In addition to this, I bought a 43lb pail of hard white and it's pristine. You can't go wrong with Ancient grains. A little pricier than others, but you'll see why when you get it. All organic too!

Naturally Blond and Excellent amount of Gluten! This makes very nice bread. I ground 3 pounds last night and made 4 loaves today ~ excellent consistency and color as well as elasticity and, of course, flavor.I will buy again. Yes, it is pricy, but you are definitely getting what you pay for here. The wheat berries were a nice golden blond color (no bitter tannins like the Hard Red Winter Wheat has) and WOW! CLEAN! I have ordered organic and non-organic wheat berries to mill into flour for my breads for decades and I can honestly say I have never seen wheat this constant in size and color or wheat this clean. BEAUTIFUL!If you are a bread baker, treat yourself: this is the grain you have been dreaming about. I will buy again!
